- 1 ripe banana mashed
- 1 medium apple coarsely grated
- 1 medium carrot peeled & coarsely grated
- 1 cup(s) rolled oats (gluten-free if preferred)
- 1/3 cup(s) raisins
- 1 tablespoon(s) natural peanut butter
- 1 tablespoon(s) chia seeds
- 1 tablespoon(s) coconut oil melted (or any neutral oil like canola or avocado oil)
- 1 teaspoon(s) ground cinnamon
- 1 teaspoon(s) ground ginger
- 1/2 teaspoon(s) ground nutmeg
Instructions
- Preheat and prepare: Preheat the oven to 350ยฐF (180ยฐC). Line a baking sheet with baking paper.
- Mix the ingredients: Add the mashed banana, grated apple, grated carrot, rolled oats, raisins, peanut butter, chia seeds, melted coconut oil, cinnamon, ginger, and nutmeg to the bowl. Stir until everything is well combined. Let the mixture sit for 5 minutes to allow the chia seeds to absorb liquid and thicken the mixture.The mixture should be thick enough to hold together when pressed but still moist. If it's too crumbly, add a little more mashed banana or a splash of water. If it feels too sticky, add an extra tablespoon of oats.
- Shape the bites: Scoop out portions of the mixture, about 2 tablespoons per bite. Roll each portion into a ball and flatten slightly into round bites. Make sure the raisins are not too exposed on the outside, as they may catch and burn during baking.
- Bake: Place the bites on the prepared baking sheet. Bake in the preheated oven for 18-20 minutes, or until the bites are golden brown and firm to the touch.
- Cool and serve: Remove from the oven and transfer the bites to a wire rack to cool completely before serving.
Notes
- Freezer-Friendly: These bites freeze well! Allow them to cool completely before transferring them to a freezer-safe container or bag. Store for up to 2 months. To enjoy, let them thaw at room temperature for a few minutes or reheat in the microwave.
- Peanut-Free Option: Swap the peanut butter for sunflower seed butter to make these bites nut-free.
- Oil-Free Option: You can omit the coconut oil if desired. Just note that the bites will be slightly less moist.
- Other Add-Ins: Feel free to add other dried fruits like cranberries or chopped dates, or mix in some finely chopped nuts for added texture (if you don't need the bites to be nut-free).
