Homemade Pecan Energy Bar
Indulge in these homemade pecan energy bars, crafted with the natural sweetness of dates, packed with wholesome pecans, these bars offer a deliciously nutritious boost of energy for any time of day! Also see the recipe notes for pecan substitutions if needed.

Ingredients
- 1 1/2 cup(s) medjool dates pitted (8.9 oz/ 252 g))
- 1 cup(s) pecans
- 1/2 cup(s) rolled oats (gluten-free if preferred)
- 1 tablespoon(s) chia seeds (optional)
- 1 teaspoon(s) vanilla extract
- 1/2 teaspoon(s) ground cinnamon
- 1/4 teaspoon(s) salt
Instructions
- Preheat the oven to 200ยฐF (90ยฐC). Line a baking sheet with parchment paper.
- Place the dates in a food processor and pulse until chopped and a rough texture forms. Add the remaining ingredients and process for a minute, to form a crumbly dough.
- On a clean work surface or a sheet of parchment paper, roll out into a 6" x 10.5โ (15x25cm) rectangle, and cut the dough into 12 even-sized bars.
- Place the bars on the prepared baking sheet and bake for 30 minutes, just to dry them out a little. Then remove from the oven and set on a wire rack to cool to room temperature before enjoying.
- Store the bars in an airtight container, in the refrigerator, or freezer.
Notes
Pecan sub/ nut free: you can sub pecans with equal amounts of walnuts, cashews, sunflower seeds, or pepitas (pumpkin seeds)
