Instructions
- Mash the Avocado: Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork until smooth, leaving some chunks for texture.
- Add the Pesto Ingredients: Stir in the lemon juice, fresh basil, nutritional yeast, onion powder, garlic powder, salt, and black pepper. Mash and mix until well combined. Lastly add the beans and gently stir until the beans are evenly coated.
- Assemble the Toast: Spread the avocado pesto bean mixture generously on the toasted bread. Sprinkle with red pepper flakes (if using) and serve immediately.

Recipe Tweaks & Tips
This dish is best enjoyed fresh, but you can store the pesto bean mixture (without the bread) in an airtight container in the fridge for up to 1 day. Toast the bread fresh each time to maintain its crispness.
- Add a protein boost: For an extra protein boost, top the toast with a few slices of grilled tempeh or tofu.
- Flavor variation: Add a pinch of smoked paprika to the avocado mixture for a smoky flavor that pairs well with the creamy avocado and beans.
- Serve with greens: For a more substantial meal, serve the avocado pesto beans on a bed of fresh greens or with a side of roasted vegetables.
