Smashed Avocado & Tofu Bacon Sandwich

Ingredients
- 1 avocado
- 2 green onions finely sliced
- 1/4 teaspoon(s) salt
- 1/8 teaspoon(s) black pepper
- 1/2 teaspoon(s) lemon juice
- 4 slices bread of choice toasted (gluten-free if preferred)
- 1 handful(s) baby spinach
- 4 radishes sliced
- 8 strips Tofu Bacon (homemade or store-bought)
Instructions
- Place avocado in a bowl and mash with a fork until smooth. Stir in green onions, salt, pepper, and lemon juice to taste.
- Cook the tofu bacon according to the recipe or package instructions.
- Toast four slices of bread. Take two pieces of toast and spread smashed avocado on each slice, then add radishes, 4 tofu bacon strips per sandwich, and baby spinach. Top each with another slice of toasted bread and enjoy your sandwiches!
